Steak, Roasted Veggies, and Garlic Butter

Steak is not only delicious but also full of muscle-building proteins, zinc and iron that support your immune system and help to maintain energy levels. It’s one of the fastest and the most impressive dishes to prepare at home, especially when paired with homemade garlic butter, herb roasted vegetables and rocket salad on the side.

(serves 2)

INGREDIENTS:

For the roasted vegetables:

• 4 carrots, peeled and chopped
• 200 g sweet potatoes, chopped
• 1 yellow pepper, sliced
• 10 g herbs (I used rosemary, sage and thyme)
• 2 garlic cloves, minced
• Salt and pepper, to season
• Olive oil
• 8 cherry tomatoes

For the garlic butter:

• 50 g good quality butter
• 2 garlic cloves, minced
• 2 tsp chives, chopped
• 1 tsp fresh lemon juice

For the salad:

• 30 g rocket salad and baby leaves, washed
• 20 g parmesan cheese, shaved
• 1 tbsp balsamic vinegar
• 2 tbsp olive oil
• Salt and pepper to season

For the steak:

• 2 x 200 g great quality sirloin steaks
• Sea salt and black pepper to taste
• 1 tbsp olive oil

METHOD:

• Preheat the oven to 220°C and line a baking tray with baking parchment.
• Place the carrots, sweet potatoes, yellow pepper, herbs, and the garlic cloves in a large bowl and toss with olive oil and season with salt and pepper.
• Spread the vegetables evenly on a previously prepared baking parchment and bake for around 30 minutes until vegetables are golden brown.
• After 30 minutes, add 8 cherry tomatoes and bake for another 10 minutes.
• Meanwhile, combine all the garlic butter ingredients and leave it in the fridge to chill.
• Place the salad leaves in the bowl and top with parmesan cheese.
• Mix the balsamic vinegar with the olive oil and season with salt and pepper. Leave the dressing on the side for a moment.
• Remove the steak from the fridge and bring it to room temperature.
• Dry each of the steaks with a paper towel and season both sides with salt and pepper.
• Heat 1 tbsp of olive oil in a large size pan over medium heat and fry the steaks for 1 minute on each side.
• Add half of the garlic butter, and as soon the butter is melted, spoon it over the steaks for another 2 minutes in total for medium.
• Transfer the steaks to a chopping board and leave it to rest for about 5 minutes.
• Pour the salad dressing over the rocket salad.
• Slice the steak, top with the rest of the garlic butter and serve with the roasted vegetables and rocket salad on the side.
